Kabosu: Japan's Rare Citrus Fruit

Kabosu are a Japanese citrus fruit that have a sour taste similar to sudachi.
Kabosu are quite rare, even in Japan. Most Japanese people can't tell the difference between a Kabosu and a Sudachi.
Kabosu are almost exclusively grown in Oita prefecture where they are common. In the rest of Japan, they are considered fairly exotic.
Kabosu are often incorrectly referred to as limes. They are related to Yuzu fruit and Bitter Orange. Kabosu juice is valued as a beverage and topping for fish that reduces fishy tastes.
